Zesty Crockpot Chicken

When taking off on vacation, or if your full time RV’ing it, meal planning is something that requires some extra attention. Rv kitchens simply don’t have the space a normal kitchen does, which can mean making full course meals turns into a balancing act better suited for the circus than the kitchen. But this doesn’t mean you shouldn’t be able to enjoy flavorful dishes, or be stuck cooking outside. It just means you need to find the right recipes that are simple to make, require few ingredients, yet pack a punch in the flavor department.

This is where your crock pot becomes your best friend.

You can toss dinner in and have it ready when you are. After a day of exploring out and about in a new area , or if you just want to relax with a good book and take a nap, having dinner ready with minimal effort is wonderful.

My first crock pot RV approved meal is something we’ve been making in our family for the last five years or so. It transfers from cooking in the kitchen to RV cooking with no issues at all.

The best part is you only need FIVE ingredients:

Boneless skinless chicken breasts or thighs
Good seasons ZESTY Italian dressing mix
2tbsp butter
1/2 cup water
8oz cheese
1) In your crock pot you can spray with non stick spray
or grab yourself some crock pot liners
for an even easier clean up.

2) Toss in your chicken, butter
and mix the seasoning with the water
and pour over the chicken.

That’s it. Set your crock pot either to low or high, depending on when your starting it and what time you want to eat. This is where a programmable crock pot is wonderful. Once it’s done cooking, it automatically switches to warm for you. When your ready to eat, shred the chicken and toss in the cream cheese and cover back up.

This chicken is creamy and comforting and best served over rice or pasta. So while the cream cheese is warming up, cook your pasta or rice. When done and ready to eat stir the chicken and cream cheese to thoroughly mix them together and place on top of rice or pasta.

Serve with a simple salad and garlic bread for a meal that tastes like you spent hours slaving away!
