Today is National Dessert Day, and when you’re camping, dessert is always a must!
These cherry empanadas have a special place in my heart as I grew up watching my grandma make them. This month, I thought it was time to give my kids the same chance to love them like I do. They are simple to make and only require a few ingredients. You can make them at home, even better, you can make them while CAMPING. They make the perfect crispy, sweet, warm dessert on a cold night sitting around the campfire.
- Burrtio size tortillas
- Pie filling of your choice
- Sugar
- Cinnamon
- Oil
Directions
1. In a large bowl, mix sugar and Cinnamon. I don’t have exact portions, I just toss it together and mix until it looks good.
2. Next, fill the center of the tortilla with pie filling and fold tightly, just as you would a regular burrito. (TIP: If you want to prep these a day or two before heading out on your camping trip, after rolling the tortillas, wrap tightly with saran wrap and store in a zip lock bag.)
3. When ready to cook, pour an inch or two of oil in a large, deep pan and heat until hot. Using tongs, gently place the empanadas into the oil and fry until golden on one size, then flip. Once done, take the empanada and place directly into the cinnamon and sugar mixture and roll to completely cover the tortilla.
4. Cool for a minute or two then enjoy!
They were kid approved and I know I’ll be making these on our next camping trip!
